A Scrumptious Story

Me a couple years back with my very first invented recipe.

Hi! My name is Chloe! One day, I hope to become a keto pastry chef. My favorite thing to do in the kitchen is invent recipes. Here is the story AND recipe for my very first invented recipe. ( it is a keto muffin recipe ) It is high in fat and are called “Coconut Joy Muffins”.

So, it all started the afternoon before an end-of-the-year homeschool pitch- in. I was almost 100% determined to invent some sort of recipe with unsweetened coconut flakes, but I just didn’t know what. It took me a couple minutes, then… I HAD IT!!!! I was going to make coconut flake muffins!! I wrote down ingredients and amounts, then collected all the things I would need to make my brilliant idea come to life. I pre-heated the oven to 350 degrease F. I… was… EXTATIC! The muffins were finally ready for the oven after a few minor adjustments were made in the measurements. I called my mom in to supervise me putting my first invented recipe in the oven. Before I did, I put a special ingredient in the center of every gooey muffin. I waited for what seemed like eternity (15 minutes), and the delicious smelling muffins were out of the toasty oven. It was autumn, so when I opened the oven, it felt wonderful! After the muffins cooled down, my brother, my mom and I tasted my recipe…it was fantastic!! I had my dad taste it and he thought it was tastalicious too! Well, that’s the story of my first recipe. Enjoy the recipe for my now famous Coconut Joy Muffins. I hope you love this recipe as much as me and my family do!

Pre-heat to: 350 F Cook time: 15 min. Difficulty level: medium/ hard

  • 2 cups blanched almond flour
  • 1 cup heavy cream
  • 1/2 cup unsweetened coconut flakes
  • 1 teaspoon (tsp.) baking powder
  • 1/2 teaspoon (tsp.) salt
  • 3 eggs
  • 1/2 teaspoon (tsp.) Allulose
  • 1 teaspoon (tsp.) vanilla
    Steps: Put all ingredients in large mixing bowl. Stir all ingredients together until thoroughly combined. Place cupcake liners into cupcake pan. Distribute batter equally among liners, then insert the special ingredient (a stevia sweetened chocolate chip) into the center of each muffin. Bake in the oven for 15 minutes. Cool for 10 minutes. After cooled, enjoy the special and scrumptious treat you whipped up.
