We were out of state visiting family the last few days. When we are on the road or traveling, we can always find something keto to eat. From grilled chicken tenders and broccoli at Cracker Barrel to taking the toppings off pizza at a local pizza joint. This past week, we were staying at my grandparents house. It’s certainly not the same without them, but we are so thankful we could stay there. The beauty of staying somewhere with a kitchen is we can cook. We made tacos with cheese shells and had cheeseburgers with salad. It was wonderful and we know Mama G would have loved us enjoying her kitchen. Onto snacking on vacation.
Our kids love snacks…don’t we all?! The first morning we were in North Carolina, I made extra bacon with our eggs. One of our favorite snacks may sound nasty to you, but don’t bash it til you try it. Bacon and cream cheese! You get the yummy, savory bacon with the creamy, delicious cream cheese. You can’t go wrong! On vacation, it’s hard to get all of Levi’s fat in because we are on the go and we don’t have all of our usual kitchen resources at our fingertips. One night he said he wanted a handful of nuts (another favorite snack). We initially said “no” because he had already brushed his teeth and gotten ready for bed. Once we thought about it, we realized we needed to let him get some more fat in for the day. He polished off 2 slices of bacon with 4 ounces of cream cheese. #baconFTW once again!
