Since our daughter was old enough, pancakes have been a favorite breakfast of choice on the weekends. If they were from a mix, they’d be fluffy! Anything we attempted to make from scratch usually landed flat (quite literally). They may have had enough depth to encase some (now sugar free) chocolate chips. But they were still not the same.
Finally, I found a recipe that delivered what I had longed for. Fluffy. Keto. Pancakes! The recipe was originally from another website but they pulled the page. Fortunately, I tend to keep backups of recipes that I enjoy for just such an occasion. This was one I felt good enough to share it.
Mods
I’ve made these a number of times now and experimented a bit each time.
I’ve tried leaving the Erythritol out. It doesn’t seem to make much of a difference if you use a syrup for topping. But if you eat them with just butter, as Aaron tends to do, it could make a difference.
I would be remiss if I didn’t say that the kids love chocolate chips in their pancakes. But due to the main sweetener used in most, we can’t do this all of the time. Lilly’s Dark Chocolate Chips use Erythritol and Stevia. So throwing in a half-cup of Lilly’s Dark Chocolate Chips in is a nice treat at 3 Net Carbs per 60 chips.
For Syrup, our current favorite is Walden Farms. It’s sweetened with X. So it doesn’t seem to affect our ketones.
These are just a few mods you could do.
Software
- 1/4 c Coconut Flour
- 6 Lg Eggs
- 2 Tbsp Erythritol
- 1 tsp Baking Powder
- Pinch of Sea Salt
- 6 Tbsp Unsweetened Almond Milk
- 1 tsp Vanilla Extract
- Oil of your choice for the pan
Optional
Application
- In a large bowl, combine dry ingredients and whisk together
- Add Eggs, Almond Flour and Vanilla Extract
- Let it set for a few minutes to allow the coconut flour to absorb some of the liquid
- Apply a thin layer of oil to a pan pre-heated to medium heat
- Drop a pancake onto the heated pan (about 1/3 cup)
- Cover oiled pan and cook for 1 to 2 minutes until bubbles show up (yes bubbles in ket pancakes!)
- Flip and cook another 1 to 2 minutes
- Makes about 7
